Grape jams

The grapes’ natural pectin and acidity help the jam set, though commercial makers standardise with added pectin for consistent firmness. Concord grape jam, with its distinctive foxy aroma, remains a classic of North American preserving tradition. Manufacture follows jam regulations on fruit content and soluble solids, with hot filling and proper sealing to ensure a safe, shelf-stable product.
