Gin begins as rectified ethanol, then takes its character from juniper and other plant ingredients, usually by redistilling the spirit with the flavourings. Juniper must dominate for the name to apply, with coriander, citrus peel, angelica and cardamom in supporting roles. Distillers choose between steeping the botanicals in the still or suspending them in vapour baskets, each giving a different balance. The result is bottled at strengths that suit cocktails or sipping, and regulations define what may be called gin.
