Genetic engineering
Constructing novel microbial strains to improve their properties and create new products is the work of genetic engineering. The toolkit cuts and splices DNA in vitro: building new genes or gene combinations, placing them under different regulatory systems and inserting them into host cells. Food biotechnology uses these techniques to raise enzyme yields, build vitamin pathways and tailor fermentation behaviour. Engineered strains face safety assessment and regulatory oversight before commercial use, with containment and labelling rules varying by region.
