Gellan gums

Gellan gums are gums containing gellan, a microbial polysaccharide produced by Sphingomonas paucimobilis, which form transparent and heat- or acid-resistant gels. Sold in high-acyl and low-acyl forms, they give textures ranging from soft and elastic to hard and brittle, letting formulators dial in the target mouthfeel. They are widely used as thickeners and gelling agents in foods: they stabilise dairy drinks, set confectionery, clarify beverages and create heat-stable gels, valued for clarity, low use levels and stability across a wide pH range. Their heat resistance suits bakery fillings and retorted desserts.
