Gayal meat
Meat from gayals, the large semi-domesticated oxen of India, is gayal meat, taken from animals raised for both meat and milk. Gayals are the semi-domesticated form of the gaur (Bos gaurus), sometimes classified as Bos frontalis, and breeders cross the bulls with English cattle breeds to raise good beef stock. The meat is typically lean and used in local cooking. Like all game and semi-wild meat, it needs rapid chilling after slaughter and careful handling to keep bacterial loads low.
