Fruit peel
The rind or skin of fruits. It may be removed before consumption or eaten at the same time, and is rich in fibre — as well as pectin, essential oils and bitter compounds. Some peels are removed and used as garnishes or as ingredients in various dishes; citrus peel is the most common culinary type, whose zest provides aromatic oils for flavouring and whose pith and peel supply pectin for jam-making. Pesticide residues on peel are a safety consideration for uses where peel is eaten.
