Fish soups
Soups made from fish or other marine animals, usually seasoned and sometimes with chunks of fish. They are sold canned, dried or bottled. They are valued for flavour and nutrition, with safety attention on fish freshness, allergen labelling and correct processing. Bouillabaisse, tom yum and chowders show the range, from clear broths to cream-thickened bisques; industrial versions are retorted or spray-dried into powders and cubes. Formulation must manage fish protein denaturation during heat processing, and dried mixes are specified for rehydration behaviour, flavour strength and sodium content.
