Exo-1,4-β-xylosidases
Enzymes that cleave xylose units from the ends of xylan chains, an exo-acting alternative term for xylan 1,4-β-xylosidases. Working alongside endo-xylanases, which cut inside the chain, they complete the breakdown of hemicellulose in brewing, baking and biomass processing, releasing fermentable xylose. Also called β-xylosidases (EC 3.2.1.37), they release xylose monomers from xylo-oligosaccharides generated by endo-xylanases, completing saccharification in brewing adjunct processing and second-generation bioethanol production. Food-grade preparations must be free of unwanted side activities, and their synergy with endo-enzymes is optimised by dosage trials.
