Dentex
Dentex is the genus name for several sea bream species, marine fish of the eastern Atlantic and Mediterranean. The common dentex is the most celebrated table fish of the group, with firm white flesh of delicate flavour suited to grilling and baking. Fish are sold fresh, whole or as fillets. As with all wild-caught species, rapid chilling after capture protects quality, and larger, long-lived specimens can accumulate mercury, so consumption advice for vulnerable groups applies. Stock sustainability varies by fishing area.
