Delicatessen salads are the chilled, ready-to-eat salads sold from deli counters, often bound with mayonnaise: coleslaw, potato salad and herring salad are classics. Their blend of cooked ingredients, rich dressings and heavy handling makes them potentially hazardous foods needing continuous refrigeration and short shelf lives. Listeria monocytogenes and Staphylococcus aureus are the chief hazards, managed through pasteurized ingredients, chilled assembly, hygienic handling and strict use-by dating.
