Debranching enzymes
Debranching enzymes is the collective term for alpha-dextrin endo-1,6-glucosidases and isoamylases, which snip the branch points of starch molecules. By straightening the chains they expose more substrate to other enzymes, boosting glucose and maltose yields in syrup manufacture. They also tune starch functionality for foods, influencing gel strength and retrogradation in baked goods and desserts. Suppliers offer them as precision tools for syrup, brewing and baking applications, where small doses reshape carbohydrate behaviour. Pullulanase, a well-known debranching enzyme, features in many commercial enzyme blends for starch processing.
