Crunchiness
Crunchiness is a texture term describing the extent to which a food is crunchy, that is, hard and crisp, one of the most liked mouthfeel qualities in snacks, breakfast cereals and fried foods. Sensory panels rate it by the loudness of the bite and the size of the fragments produced, while instruments record force-deformation curves and the acoustic signals given off as the product fractures. In quality control, a loss of crunchiness is an early warning of moisture uptake, staling or packaging failure, so it guides decisions on barrier materials, storage conditions and shelf-life limits.
