Cold storage

Cold storage is the holding of foods at refrigeration temperatures to stretch shelf life — the quiet workhorse of the food system. By slowing microbial growth and enzymatic decay, it buys days or weeks for perishables moving from farm to table. But it is not a pause button: psychrotrophic spoilage organisms still advance, flavours fade, and chilling-sensitive produce can suffer injury.
