Coertuek
Coertuek is the Turkish common name for Echinophora tenuifolia subsp. sibthorpiana, an aromatic plant of the carrot family valued as a spice and as a source of essential oils. Its foliage and seeds carry a pungent, resinous aroma that seasons meats, pickles, and traditional dishes in Anatolian cooking. Distillers also capture its volatile oils for flavouring use. Like many regional spices, it is traded mostly in local markets, where buyers judge it on aroma intensity and freedom from stems and foreign matter — the practical markers of a well-harvested, well-dried lot.
