Chicken gizzard pickles

Chicken gizzard pickles are preserved meat products made from sliced, cooked chicken gizzards packed with salt and water, usually built on a mustard-oil or vinegar base. Typical seasonings include garlic, ginger, cumin, red chilli, aniseed, caraway, turmeric, black pepper, cinnamon, and cloves. The combination of acidity, salt, and an oil layer creates conditions that restrain spoilage organisms and extend shelf life. Even so, manufacturers must control the finished pH and salt concentration, apply adequate heat treatment to the gizzards, and maintain strict plant hygiene, since a meat pickle that is under-acidified or under-processed can become a vehicle for foodborne pathogens.
