Cephalopods
Cephalopods are the common name for an advanced group of molluscs, class Cephalopoda, characterized by absent or reduced internal shells and heads surrounded by tentacles. The group includes cuttlefish, octopus and squid, and many species are commercially important food species worldwide. They are valued for tender flesh when cooked very briefly or for a long time, turning rubbery in between. Proper handling, rapid chilling and correct cooking preserve their delicate quality and sweetness. Their ink, a culinary delicacy, colours pasta and risotto a dramatic black.
