Carbon monoxide
Carbon monoxide is a toxic colourless, odourless gas with the chemical formula CO, which may be formed by incomplete combustion of carbon-containing materials. It may be used in modified atmosphere packaging of meat or other foods, where it binds to myoglobin and keeps meat looking attractively red. This use is controversial and regulated, since the stable red colour can mask spoilage that consumers would otherwise detect by discoloration. Safe combustion and ventilation in food plants remain the primary defence against accidental exposure.
