Canneries
Canneries are factories where foods are canned. They handle the full sequence of receiving, washing, sorting, blanching, filling, exhausting, sealing, retorting, cooling and labelling under strict hygiene and process control. Thermal process validation is the critical discipline in canneries: every product and container size needs a proven time-temperature schedule that guarantees commercial sterility. Seal integrity checks, cooling-water chlorination and post-process handling controls complete the safety system that lets canned foods store safely at ambient temperature. Incoming raw materials are inspected and graded, because the quality of the canned product can never exceed the quality of what goes into the can.
