Cane sugar
Cane sugar is sucrose extracted from the stalks of sugar cane, Saccharum officinarum. Processing of sugar cane to produce cane sugar involves washing and cutting the cane stalks, extraction of cane sugar juices by crushing the stalks using a series of heavy rollers, purification of the raw cane sugar juices by precipitation of impurities through liming and clarification, filtration to remove the precipitates, and evaporation of the purified juices followed by crystallization. The result is the world’s most widely produced sweetener, traded as raw, plantation-white or fully refined sugar.
