Cane sugar syrups
Cane sugar syrups are highly concentrated aqueous solutions of cane sugar produced by evaporation of purified cane sugar juices, known as thin juices. They are intermediate products in sugar refining, standing between the clarified juice and the final crystallization of sucrose. Cane sugar syrups are also sold as sweeteners in their own right for beverages, baking and confectionery, where their clean sweetness, ready solubility and ability to retain moisture are valued. Golden syrup and treacle are familiar retail examples of this family of concentrated sugar syrups.
