Calves
Calves are specific types of young, sexually immature bovine animals, usually cattle which are under eight months of age, that produce beef and veal. Male calves are called bull calves and females are called heifer calves. Their meat is pale and tender, and their stomachs, specifically the abomasum, are the traditional source of rennet for cheesemaking. Rearing systems range from dairy-beef enterprises, where surplus dairy calves are finished for meat, to specialist veal production, and welfare standards for calf housing and feeding are closely regulated in many countries.
