Burfee is a concentrated dried dairy product prepared from khoa, the milk solids obtained by slowly evaporating milk until only dense solids remain. Popular as a sweet in India, it is kneaded smooth, sweetened and formed into fudge-like squares or diamonds, often flavoured with cardamom, pistachio, saffron or rose. Because it is a milk-based sweet handled extensively during shaping and decoration, hygienic manufacture, clean water and proper storage are important for its safety, and it is best eaten fresh rather than kept for long periods.
