Buffalo butter

Buffalo butter is butter made from buffalo milk, the milk of the domesticated water buffalo. Because buffalo milk is considerably richer in fat than cow milk, the butter churned from it is dense, creamy and pale, with a rich flavour prized in South Asian cooking. It is used both as a table spread and in traditional sweets and dishes where its flavour and texture are valued. Like all butter, it must be made from safe milk under hygienic conditions and kept chilled to protect quality and prevent spoilage.
