Bombay duck
Bombay duck is a marine fish species (Harpodon nehereus) of the Indo-West Pacific, caught principally along the Maharashtra coast of India. Despite its name it is a true fish, regarded as an excellent food fish with soft, jelly-like flesh of very high moisture content. It is marketed fresh and, more famously, as a dried and salted product with an intense umami flavour used in curries and chutneys. The high water activity of the fresh fish demands rapid chilling and careful handling to control spoilage, while the dried product relies on salt concentration and low moisture to remain shelf-stable.
