Bigeye snapper
The bigeye snapper — Lutjanus lutjanus or L. lineolatus, of the snapper family Lutjanidae — is a marine species of high commercial importance, widely distributed across the Pacific, it is valued for firm, sweet white flesh and is normally marketed fresh in Southeast Asian fish markets and cuisines. Like other reef-associated snappers, large specimens from certain areas carry a small ciguatera risk, so sourcing from reputable fisheries matters. Proper icing from catch to sale preserves its delicate flavour and texture, and as a perch-like table fish it suits steaming, frying, and curry preparations that showcase its clean taste.
