Beet molasses

Beet molasses is the syrup left as a by-product of beet sugar refining. It commonly contains about 60% sucrose, along with minerals, nitrogen compounds, and other non-sugar substances removed during crystallization. Also called beet sugar molasses, it is less prized for direct human food than cane molasses because of its stronger, less sweet flavour, but it is valuable for animal feed, fermentation feedstocks for yeast, alcohol, and organic acids, and even road de-icing. Its high mineral content reflects the impurities separated during sugar manufacture. Valorising this by-product is central to the economics of beet sugar factories, turning process residues into revenue streams.
