Atlantic salmon
Atlantic salmon (Salmo salar) is a well-known fish species of high commercial importance, indigenous to river systems linked to the Atlantic Ocean but now cultured in many other areas, including the Pacific coast and Tasmania. World production exceeds half a million tonnes per year, overwhelmingly from aquaculture, which made this premium fish affordable year-round. Its flesh has a highly valued rich flavour and pink colour from dietary carotenoids. It reaches consumers in many forms — fresh, frozen, smoked and canned. Farming practices remain under scrutiny: sea-lice control, escape prevention, feed sustainability, and flesh quality are active concerns for the industry and its regulators.
