Artemisia

Artemisia is a large genus of aromatic plants that supplies several culinary herbs and spices, including tarragon (A. dracunculus), wormwood (A. absinthium), mugwort (A. vulgaris), and davana (A. pallens). Their intense bitter, herbal, and anise-like notes flavour vermouths, bitters, liqueurs, and traditional dishes across Europe and Asia. Some species contain thujone, a monoterpene ketone with neurotoxic effects at high doses, so food and beverage uses of wormwood, absinthe ingredients, and related herbs face regulatory limits in many countries. For product developers, Artemisia species offer powerful flavour tools that must be dosed carefully and declared properly to stay within legal and sensory bounds.
