Apocarotenal
An apocarotenoid pigment of the carotenoid family, occurring in oranges and other plant foods where it contributes yellow-to-orange colour. Beta-apo-8′-carotenal (E160e) is approved as a food colour for beverages, confectionery, dairy products and margarine — a plant-derived alternative to synthetic azo dyes for clean-label formulations. Like all carotenoids it is fat-soluble and vulnerable to oxidation, so coloured products need protection from light, heat and oxygen to hold their hue through shelf life. Its safety as a food colour has been evaluated by regulatory authorities, with an acceptable daily intake established.
