Alitame
A high-intensity sweetener roughly two thousand times sweeter than sucrose, built from aspartic acid and alanine with better heat stability than aspartame — it survives baking where aspartame breaks down. Approved in several countries for tabletop sweeteners, beverages, baked goods and confectionery, it never achieved the market dominance of its better-known rivals despite its clean sweetness and stability. Like all intense sweeteners it passed full toxicological review before approval, with an ADI set from long-term studies. Alitame remains a technically elegant sweetener awaiting wider adoption.
