Airflow properties
The characteristics of air flow through, or across the surface of, a substance or a piece of equipment — a design parameter for ovens, driers and storage systems. Engineers use airflow properties when designing drying and baking equipment for uniform heat and moisture removal, and when deciding how to store large quantities of foods such as fruits, vegetables, cereals and carcasses so that air circulation minimises spoilage. Stagnant pockets breed condensation, mould and uneven cooling; well-designed airflow sweeps moisture away and evens out temperatures. It is invisible infrastructure behind consistent drying and safe bulk storage.
