A French culinary term meaning to soften or mellow, applied when a cook deliberately tones down a flavor that is too strong, salty, acidic, or bitter. The technique is about balance rather than dilution: a splash of cream adoucit a harsh mustard sauce, a pinch of sugar adoucit an aggressive tomato sauce, and blanching adoucit the bite of bitter greens. French classical cooking treats it as a fundamental corrective maneuver, the counterpart to seasoning up, and recipes often specify it when robust ingredients threaten to dominate.
