This introductory course is designed for food handlers, manufacturing operators, culinary professionals, and anyone seeking a solid foundation in food safety principles. In this course, we break down the fundamental practices required to identify hazards, prevent contamination, control temperatures, and establish a robust culture of safety on the processing floor or kitchen.

 

Course Curriculum & Modules

 

  • Module 1: Introduction to Food Safety & Hazards
    Understanding why food safety is vital and identifying the four main types of contamination: biological (pathogens like Salmonella and E. coli), chemical (cleaners, lubricants), physical (glass, metal), and allergenic (peanuts, gluten).
  • Module 2: Personal Hygiene & Handwashing
    The correct 6-step hand hygiene technique, proper glove usage guidelines, protective hairnets/apparel standards, and health reporting policies for sick employees.
  • Module 3: Temperature Control (The Danger Zone)
    Mastering time-temperature control for safety (TCS) foods. Learn about the danger zone (4°C to 60°C / 40°F to 140°F) where bacteria grow rapidly, and verify cooking, cooling, and hot-holding temperatures.
  • Module 4: Preventing Cross-Contamination
    Techniques to keep raw materials separate from ready-to-eat (RTE) foods, assigning color-coded boards and utensils, clean-zone sanitation barriers, and preventing allergen cross-contact.
  • Module 5: Cleaning vs. Sanitizing
    The absolute difference between cleaning (removing visible dirt) and sanitizing (reducing pathogens to safe levels). Learn chemical dilutions, contact times, and sanitation loops.
  • Module 6: Monitoring, Documentation & Reporting
    Why keeping records matters, how to fill out daily temperature checklists, and the procedure for reporting deviations to quality supervisors immediately.

 

Certification & Accreditation

 

Upon completing all modules and passing the final interactive assessment with a score of 70% or higher, you will be awarded an official GIFSQ Food Safety Certificate of Completion to verify your foundational training.
