Sultanas
Sultanas are dried golden sultana grapes, sun-dried or mechanically dried — plumper, softer, and lighter in colour than dark raisins. They supply iron, plenty of sugar, a range of vitamins and minerals, and moderate dietary fibre. Eaten as a snack or baked into breads, cakes, and various dishes, they are also called seedless raisins. Sulfur dioxide treatment preserves their golden colour, which must be declared on labels, and their natural sugars make them a favourite in both sweet and savoury cooking.
