Pito
Traditional African brews made by fermenting mashes based on cereals such as sorghum or millet, brewed at household and village scale and usually drunk fresh while mildly alcoholic. The brewing steps of malting, mashing, and spontaneous fermentation give pito its characteristic sour tang and cloudy body. As an artisanal fermentation, its safety rests on clean brewing water, sound grain free of mold, and hygienic vessels and handling. Moldy grain can carry mycotoxins such as aflatoxins into the brew, and dirty equipment invites bacterial spoilage, so careful raw material selection and sanitation at every step matter most.
