SOP – Cold Holding

Cold doesn’t kill bacteria – it just slows them down, and only if it’s actually cold. This SOP covers holding at or below 5 °C and what to do when a display cabinet starts misbehaving.

SOPs only work if people actually read them. Train each operator, get the read-and-understood signature, and keep the language as plain as the job allows – this isn’t the place to show off vocabulary.

2. Purpose

To hold chilled food at safe temperatures during storage, display and service.

3. Scope

Applies to all cold holding including display cabinets, salad bars and chilled service at [site name].

5. Materials and equipment

  • Calibrated probe or infrared thermometer (probe for verification)

6. Safety precautions

  • Don’t overload display cabinets – blocked airflow means warm spots.
  • Clean up spills promptly to avoid slips.

7. Procedure

Follow the steps in order. Steps marked [CHECK] are the ones people skip under pressure – don’t.

  1. Pre-chill display equipment before loading; load only food already at ≤5 °C. [CHECK]
  2. Check and record air/product temperatures at [frequency, e.g., every 4 hours]; initial the log.
  3. Keep cabinet doors/covers closed as much as service allows; don’t leave chilled food out at ambient.
  4. Respect the 2-hour/4-hour rule per your local code for food out of temperature control – know which one applies to you.
  5. If food exceeds 5 °C: return it to the chiller immediately if within the time limit, otherwise discard. [CHECK]
  6. Report warm cabinets to maintenance at once; move stock to a working unit.
  7. At end of display, return in-date food to the chiller or discard per the date-marking SOP.
