Ipomoea aquatica, better known as water spinach, is a semi-aquatic vegetable grown across China, Taiwan, Vietnam, and Southeast Asia. Cooks use the hollow stems and tender leaves boiled or stir-fried, often with garlic and chilli, and the stems go into pickles too. It thrives in flooded fields, ponds, and slow waterways, which makes it easy to farm but puts the spotlight on water quality — crops from polluted water can carry contaminants, so clean cultivation and thorough washing matter. Nutritionally it contributes vitamins, minerals, and fibre, and its crisp hollow stems stay crunchy in the wok, which is the texture cooks prize.
