Vegetable juice beverages
Beverages prepared from vegetable juices with the addition of other ingredients — such as water, sweeteners, salt, seasonings, or fruit juices. Vegetable juice beverages range from savoury tomato-based drinks to carrot-orange blends marketed for their beta-carotene content. Formulation balances nutrition, flavour, and stability: acidity is adjusted for taste and for safe thermal processing, while pulp content affects mouthfeel. Because low-acid vegetable juices (pH above 4.6) require full sterilization or refrigeration to control Clostridium botulinum, commercial products are typically acidified, heat-processed, and aseptically packed or kept chilled throughout distribution.
