Tamarillos are fruits produced by Cyphomandra betacea, also called tree tomatoes. The skin is yellow to deep red, while the flesh varies from yellow-orange to purple and contains numerous seeds. They supply plenty of potassium and carotenes, with moderate vitamin E and vitamin C. They are best eaten cooked with the bitter-tasting skin removed, and go into sauces, chutneys, desserts, and juices. Their tangy, slightly astringent flavour suits both sweet and savoury applications, and they must be fully ripe for the best eating quality.
