Taenia is a genus of parasitic Cestoda tapeworms. T. solium is associated with pork, while T. saginata is linked to beef, and humans usually acquire infection from raw or undercooked beef or pork carrying the larval cysts. Thorough cooking destroys the parasites, and meat inspection programmes condemn heavily infected carcasses while freezing can inactivate cysts in lightly affected meat. Proper sanitation, which breaks the cycle between human carriers and livestock, is the long-term control. These are classic foodborne parasites of global importance.
