Sweet limes

Sweet limes are citrus fruits produced by Citrus limettioides or C. lumia, with greenish to orange-yellow peel when ripe. The juicy pulp is pale yellow with a non-acid, faintly bitter flavour, making them refreshing eaten out of hand, cooked, or preserved. The peel yields essential oils with a strong lemon aroma. Popular in the Middle East and South Asia, they are sometimes confused with other sweet citrus, but their near-absence of acidity sets them apart. Like all citrus they are a useful source of vitamin C.
