Swedes
Swedes are cabbage-family root vegetables shaped much like turnips, with which they are often confused. Also known as rutabagas, they are rich in vitamin C and potassium and contain small amounts of vitamin A. Its sweet yellow flesh is prepared much like turnips: boiled, mashed, eaten raw, or used in soups and stews. Hardy and excellent in storage, they are a traditional winter vegetable of northern Europe, and their mild sweetness deepens with roasting. They store for months in cool cellars, making them a reliable winter staple.
