Suluguni cheese
Suluguni cheese is a Georgian mild semi-soft cheese made from ewe milk, with a firm, elastic, slightly briny character. It is often eaten fried or grilled, when its excellent melting behaviour shines, or used in a variety of dishes including the cheese-filled flatbread khachapuri. Traditionally made by stretching and kneading the curd in hot whey, it belongs to the pasta-filata family. As a brined cheese it needs controlled salt levels and hygienic manufacture, and its growing popularity beyond Georgia has made it a recognized artisanal cheese.
