EC 3.4.21.62. A group of proteinases (serine endoproteinases) produced by Bacillus spp. that exhibit broad specificity, but with a preference for large uncharged residues in the P1 position. Variants include subtilisin BPN’ and subtilisin Carlsberg. Used for production of protein hydrolysates and casein phosphopeptides, and for meat tenderization.
