Squash seeds are the seeds contained in the fruits, squashes, produced by plants of the genus Cucurbita, including pumpkins. The kernels are eaten raw or cooked, most familiarly roasted and salted as a snack, and they are also pressed as a source of oils, with Styrian pumpkin seed oil a noted speciality. They are nutritious, rich in protein, unsaturated fats, zinc, and magnesium. Like other seeds they must be dried properly after harvest and stored dry, since damp seeds invite mould growth and mycotoxin contamination that ruins both safety and flavour.
