Spreadability
Spreadability is the texture property describing how easily a product such as butter, margarine, or a cheese spread can be spread straight from the refrigerator. It is assessed by sensory panels and measured instrumentally with penetration and extrusion tests, and it depends on fat crystallization, the ratio of solid to liquid fat, oil content, and temperature. Good spreadability direct from the fridge is a key quality target in spreads, balanced against the need for the product to hold its shape on the table and in the tub. Emulsifiers, fat blending, and controlled crystallization are the tools formulators use to tune it.
