Sugar alcohol (polyol) produced by reduction of glucose or fructose. Occurs naturally and has approximately 0.5× the sweetness of sucrose. Digestion of sorbitol yields fructose, making it suitable for use as a sweetener for diabetic foods. Also known as glucitol.
