Smoothness
Smoothness is a texture attribute describing how free a food is from grittiness, lumps, or roughness in the mouth, and it is a key driver of liking in products such as yoghurt, chocolate, purees, and sauces. Sensory panels assess it with defined scales and reference standards, because consumers notice even small losses of smoothness quickly. In processing it is built through homogenization, fine milling, and emulsification, which reduce particle size and distribute fat and solids evenly. When smoothness is lost, through protein aggregation, fat crystallization, starch retrogradation, or poor reconstitution, it signals a defect that quality teams trace back to formulation, processing, or storage conditions.
