Smear cheese
Smear cheese is a surface-ripened cheese in which the rind is washed or smeared at intervals during maturation with water or brines, a treatment that inhibits the growth of unwanted yeasts and fungi while encouraging the desired rind flora. Cultures such as Brevibacterium linens are often part of the smear, building the sticky orange rind and the pungent aroma typical of styles like Limburger and Munster. The washing regime shapes both flavour and appearance, and because the rind is a living ecosystem, ripening rooms must be tightly controlled for temperature, humidity, and hygiene so the surface flora stays safe, consistent, and free from spoilage organisms batch after batch.
