Skatole

Skatole is a biogenic amine which contributes to the development of taints in meat, particularly pork, the unpleasant odour known as boar taint in meat from uncastrated male pigs. Its taint is described as mothball-like and musty, distinct from the sweaty notes of androstenone. Producers manage boar taint through immunocastration, genetic selection, and processing of tainted meat. Consumers are highly sensitive to even low levels. Castration practices respond to consumer concerns. Taint-free pork is the goal. Detection methods keep tainted meat out.
